I'll need to see if my local Aldi carries aged gouda. I saw 1000 day aged gouda on their website but the local store might not have it because it's not very large.
I've recently tried a smoked gouda for the first time and it tasted like a slightly fancier mozzarella. Quite strong by itself, but great in scrambled eggs. A bit spendy, though, even at Aldi, so sticking with less expensive domestic cheese like cheddar.
